Jo Seager has the most amazing recipe for Banana Bread/Cake that I am afraid beats everything that I have had before.... it is just divine and because it has so many bananas it is lovely and gooey..
Ingredients
125g butter or margarine, softened
1 cup sugar
2 eggs
3 soft, over-ripe bananas, mashed with a fork
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
(Makes 1 standard loaf)
Preheat oven to 180 degrees C. Spray a standard 23 x 12cm (6-cup capacity) loaf tin with non-stick baking spray and line with baking paper.
Beat the softened butter and sugar until creamy and pale. Beat in the eggs, then the mashed banana. Gently mix in the flour, baking soda and salt and when just combined, pour into the prepared tin.
Bake for approximately 1 hour, until the loaf is springy in the centre and has pulled away from the sides of the tin. Cool in the tin and slice when cold. Wrap in cling film or tinfoil to freeze.
Jo suggests perhaps spreading a slice with cream cheese, butter or peanut butter...enjoy!!
